Ginger Dressing & Peanut Zoodles

Makes ~3 cups, Time: 20 minutes

I had a friend over and made her this lovely light and refreshing dish (so we could have room for hummus).

Inspired by the Thug Kitchen cookbook!

If you want something a little more substantial, feel free to use whole wheat pasta or soba noodles.

Directions:

  1. Combine all dressing ingredients in a jar and shake! Dressing stays good for u to 1 week in an airtight jar.
  2. Combine all Zoodles & Stuff in a bowl and pour dressing on top. Voila!

I have really enjoyed adding the leftover dressing to rice dishes and other salads!

If you wind up having leftovers, they can get a little soggy. So try to only dress what you will eat that day.
