Ginger Dressing & Peanut Zoodles
Makes ~3 cups, Time: 20 minutes
I had a friend over and made her this lovely light and refreshing dish (so we could have room for hummus).
Inspired by the Thug Kitchen cookbook!
- Combine all dressing ingredients in a jar and shake! Dressing stays good for u to 1 week in an airtight jar.
- Combine all Zoodles & Stuff in a bowl and pour dressing on top. Voila!
I have really enjoyed adding the leftover dressing to rice dishes and other salads!
If you wind up having leftovers, they can get a little soggy. So try to only dress what you will eat that day.
1/4 cup rice vinegar
2 T water
2 T orange juice
2 T toasted sesame oil
1.5 T finely grated ginger
1 T soy sauce or tamari
1 T lime juice
Zoodles & Stuff
3 zucchinis, spirulized
3 carrots, grated
1/2 large cucumber, cut into matchsticks or rounds
3 stalks thinly sliced green onions
1/2 cub peanuts, chopped and roasted
