#20: Sweet Potato Cinnamon Rolls

Yes. It is almost too good to be true. If a sweet potato met a cinnamon roll and they stayed together because the sweet potato “fixed him” this would be their golden child.  

Sweet Potato Cinnamon Rolls

Serves 4-8 (depends on how many oinkers you have)

Ingredients

“Rolls”

3 big sweet potatoes

1 T coconut oil

2 tsp cinnamon (you can add more or less as you like)

Vanilla Maple Cashew “Icing”DSC_0480

1 cup raw cashews

1 tsp vanilla extract

1 T Maple Syrup

2 tsp cinnamon

1-3 T coconut milk (or almond milk)

Recipe

Soak cashews in water overnight or for at least 4 hrs.

Wash sweet potato skins thoroughly.

Oven Version (preferred)

Preheat oven to 400F and prepare an ungreased baking sheet.

Cut sweet potatoes into rounds

Mix coconut oil and cinnamon together and brush that on both sides of the sweet potato

Put sweet potato in oven for 20-25 minutes on each side (you will notice mine is slightly burnt, that is what happens when you let it go for 30 min)

Take out and let cool slightly

Microwave/Oven Version (in a pinch)

Preheat oven to high Broil and prepare an ungreased baking sheet

Take fork and stab sweet potato all over, violently.

Now CAREFULLY wrap it in a wet paper towel and microwave it 3-4 minutes on each side (depending on how hefty your potato is)

Let it cool a bit or completely. You can take the skins off if you let it cool completely. It is super easy if you let it hang in the fridge overnight.

Cut into rounds and brush coconut oil and cinnamon onto each side.

Let broil 7-12 minutes on each side, until brown and delicious

 

Vanilla Maple Cashew Frosting

Drain soaked cashews and give them a rinse.

Place in Vitamix along with vanilla extract, maple syrup, cinnamon, and coconut (or almond) milk. Blend it up until it is smooth and delicious.

You can add more or less of the coconut or almond milk to thin it out.

Put icing right on top of those sweet potato rolls and eat up!

If you are feeling fancy you can add a dash of cinnamon to the top or maybe some toasted coconut.

Why can't every morning be like this?
