#15: What to do with that leftover veggie platter
Ever buy that classic veggie platter from the grocery store for a party with the intention of providing a healthy choice? Notice that, depending on the crowd, it often goes uneaten? Or worse, discarded?! GASP! Well, I have a cure for your veggie platter anxiety and woes.
Veggie Chop Topper
If you're hating on the name, I sorta am too. Looking for a way less "4-easy-payments-plus-shipping-and-handling" type thang.
Lemme tell ya, it is my NEWEST and most delicious way to use those veggies that were destined to go bad in my fridge because I didn't know what to do with them.
It's as simple as...
Taking those leftover veggies
Throwing them in a blender or food processor
Pulsing them to a chop and creating a chopped salad of sorts
Lighting em up with some fun add-ins (I used nutritional yeast and hemp hearts!)
Putting this delicious chopped salad on top of... Anything
I had leftover carrots, radishes, celery, and olives that were accompanying some hummus the previous evening.
I threw all of those bad boys in the blender, chopped em on a low setting for 20 seconds or so, threw in 3 T of hemp and 1/4 cup of nutritional yeast. I then threw that on top of some toast with Earth Balance butter and VOILA!
It was such a delicious breakfast, but the sky is the limit! I am currently fantasizing about the following...
Would definitely work with any of these veggies:
Get creative with dem add-ins:
- Nutritional Yeast
- Soy Sauce
- Miso Paste
- Garlic Powder
- Chili Flakes
Put it on top of:
- Pasta (ooo, that would be a great topper for a pasta salad)
- In some veggie sushi
