#11: Chickpea salad wraps y'all

Simple. Fast. Fresh. Cheap. Just like this meal, this post is going to be quick and easy.

Chickpea Salad Wraps

I LOVE chickpeas. Whole, mashed, pureed, roasted, sprouted, in salads…. Anywhere, anyway. They are so delicious and so versatile, just like this recipe.

I made it as an appetizer, wrapped in lettuce. When doubled, it made roughly 3-4 meals. I ate it in for 2 days, 4 ways: in lettuce wraps, tossed on a bed of greens, atop some toast, and all by itself! Tortilla chips were calling its name, so don’t be afraid to use this as a dip either.DSC_0292.JPG

Here’s what you’ll need:

  • 1 can chickpeas
  • ½ cucumber
  • ½ red/orange/green bell pepper
  • Big ole handful of parsley
  • 2 lemons
  • 1/8 tsp Pepper 
  • 1 tsp Garlic Powder
  • 1 head of lettuce (I used red leaf lettuce, which wasn't conducive to lady-like consumption). I say Butter Lettuce would work better.

Serves 2

Total time (without taking beautiful pictures at every step): 20 mins, maybe

*Note: Salt is pictured but was not used in this recipe.

I bought these ingredients at Fiesta Mart and grand total came out to be a whopping $6.99 (total includes doubling the recipe and being able to use it for 4 different meals). Ca-CHING. 

If you decide to make this, keep your browser open and close by. These instructions are tricky and can be difficult to remember. 

Step 1: Rinse chickpeas thoroughly, place in bowl

Step 2: Chop cucumber and colored pepper of choice into cubes, place in bowl

Step 3: Chop parsley as finely or as roughly as you please. It’s your parsley. I really don’t want to know…. Place in bowl.

Step 4: Squeeze you some lemons all up in there (in the bowl that is). I used the juice of 1.5 lemons because I really like the tartness. More or less, it’s up to you.

Step 5: Add the pepper and garlic powder (the quantities above are recommendations, add to your tastes)

Step 6: Stir it up, slap it (gently) on some lettuce wraps and eat it!

Some extra special fun add-ins:

  • Nutritional Yeast (I put that s%*t on everythang)
  • Pumpkin seeds
  • Sunflower seeds
  • Red Pepper Flakes
  • Shredded carrots
  • Pulsed broccoli (no enough so that it’s looking like hummus, just so you have a bunch of little broccolis running around your salad)
  • Finely chopped red onion for the Bold and the Beautiful
