#6: 3 ingredient mac and cheeze

It's vegan.... Oh yeah, it only takes 20 minutes....

And I did it in an efficiency hotel room....

Now let's talk about it.

I had come back from work only to realize that I forgot 75% of my edibles in the fridge at the plant. Womp womp. There goes my pre-made asian tofu salad from Whole Foods (which is pretty delish by the way), soy sauce, and sweet chili sauce. Pretty much everything that would flavor anything I tried to make.

Well shit, now what?


Duh... Idk.

Well I had a bag of 365 Super Grains ($3.99)


Some slightly overripe avocado (5 for $5 @ Whole Foods this week)


And that weird bag with some fish-food-looking-like-yellow stuff (truly one of my favorite food add-ons), nutritional yeast ($7.39/lb, I MAYBE used .03 of a lb...)


Before you write it off, this stuff tastes like cheese and is packed with B vitamins. I use it on sandwiches, salads, in dips, etc. It is a great way to add flavor and nutrition to your meal.

Anyway, it looks like I've got a grain, a fat, and a cheese...



*veggies were a delightful add on, I just steamed some broccoli and sweet potato. Nothing on em. Was really enjoying that pure flavor! 


*Another note, I did not measure any of this... but I am hazarding guesses...

2 cups Super Grain (or quinoa, rice, pasta, whateva)

1 whole avocado, mashed with a fork until creamy (or blended, even better)

3/4 cup of nutritional yeast

Step 1: Cook grain as per package instructions

Step 2: Combine mashed avocado and nutritional yeast with cooked grain and stir

Step 3: EAT!

Golly, that was simple, delicious, and CHEAP! I bet it is going to taste AMAZING cold too :)

Total cost of this mac and cheeze:

1/3 ($3.99) + 1/5 ($5) + .03 ($7.39) = $2.55

*and there are leftovers! 

Some add ons that would've really made this SUPERB are...

  • Caramelized onions
  • Garlic powder
  • Fresh chopped parsley
  • Black pepper
  • Red Pepper Flakes
  • Flax seeds

I hope that this inspires you to try some vegan mac and cheeze! And to be fearless with what appears to be limited options in your kitchen. No need to stress about messing it up, because that happens sometimes. But what also could happen is surprisingly delicious! Like what happened tonight. :)
